Ingredients

  • 2 tbsp vegetable oil or ghee
  • 1 small onion, finely chopped
  • 2 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 1 green chili, slit (optional)
  • 1 cup mixed vegetables (carrots, beans, peas, and corn)
  • 1 medium tomato, chopped
  • 4 cups vegetable broth or water
  • 1 tsp cumin seeds
  • 1/2 tsp turmeric powder
  • 1/2 tsp coriander powder
  • 1/2 tsp garam masala
  • Salt, to taste
  • Fresh coriander leaves, chopped (for garnish)

Instructions

Step 1: Prepare the Base

In a large pot, heat the vegetable oil or ghee over medium heat. Add the cumin seeds and let them sizzle for a few seconds until they release their aroma. This step infuses the oil with an essential flavor.

Step 2: Sauté Aromatics

Add the chopped onion, minced garlic, and grated ginger to the pot. Sauté until the onions become translucent and lightly golden. If you like it spicy, add the slit green chili at this stage.

Step 3: Add Vegetables

Next, add the mixed vegetables along with the chopped tomato. Stir well and cook for about 5-7 minutes, allowing the vegetables to soften slightly and the tomatoes to break down.

Step 5: Add Broth

Pour in the vegetable broth or water and bring the mixture to a boil. Once boiling, reduce the heat and let it simmer for about 15-20 minutes, or until the vegetables are cooked through.

After the vegetables are tender, add the garam masala and stir gently. Taste and adjust the seasoning as required. If you prefer a smoother texture, you can blend the soup using an immersion blender or a regular blender until desired consistency is achieved.
