  • 3 medium-sized potatoes, peeled and cubed

  • 2-3 green chilies, slit (adjust for spice preference)
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust for spice preference)
  • 1 teaspoon garam masala
  • 2 tablespoons cooking oil (vegetable or mustard oil)
  • Salt to taste
  • Fresh coriander leaves for garnish
  • 1 cup water (adjust for desired consistency)

Instructions

Step 1: Prepare the Base

In a large pan, heat the oil over medium heat. Add the cumin seeds and allow them to sizzle for a few seconds until fragrant. Next, add the finely chopped onions and sauté until they turn golden brown.

Step 2: Add Aromatics

Add the ginger-garlic paste and green chilies to the pan. Cook for an additional 2 minutes, stirring constantly to prevent burning.

Step 3: Incorporate Tomatoes and Spices

Then, add the pureed or chopped tomatoes along with turmeric, red chili powder, and salt. Cook the mixture until the oil separates from the masala, which usually takes about 5-7 minutes.

Step 4: Add Potatoes and Peas

Add the cubed potatoes and green peas to the pan, stirring well to coat them with the spices. Sauté for about 2-3 minutes.

Step 5: Simmer

Pour in the water and bring the curry to a boil. Once boiling, reduce the heat to low, cover the pan, and let it simmer for about 15-20 minutes, or until the potatoes are tender. Stir occasionally to prevent sticking.

Step 6: Finish with Garam Masala

Once the potatoes are cooked, add the garam masala and mix well. Cook for an additional 2 minutes to allow the flavors to meld.

Step 7: Garnish and Serve

Remove from heat and garnish with freshly chopped coriander leaves. Serve hot with steamed rice, roti, or naan.
