  • 1 teaspoon garam masala

  • Fresh coriander leaves, chopped
  • 1 tablespoon lemon juice
  • Green chutney (optional)
  • Sliced onions and cucumbers for garnish

Instructions:

Step 1: Prepare the Filling

Heat oil in a pan over medium heat. Add cumin seeds and allow them to splutter. Then, add the ginger-garlic paste and sauté until fragrant. Add the mixed vegetables and sauté for 3-4 minutes until they start to soften.

Now, incorporate the mashed potato, garam masala, red chili powder, and salt. Mix everything well and cook for another 2-3 minutes. Remove from heat and stir in the lemon juice and fresh coriander leaves. Allow the mixture to cool slightly.

Step 2: Assemble the Kathi Rolls

Warm the parathas/rotis on a skillet. Place a generous amount of the vegetable filling in the center of each paratha. Roll them tightly, folding in the sides to secure the filling. You can use a toothpick or a piece of foil to hold them together if needed.

Step 3: Toast the Rolls

Return the rolled Kathi rolls to the skillet and toast them for a few minutes on each side until they are golden and crispy. This step adds an additional layer of flavor and keeps them from being soggy.
