  • 2 cups of chopped carrots

  • 1 teaspoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • 2 tablespoons cooking oil

Step 1: Prepare the Ingredients

Start by washing and peeling the carrots. Chop them into small pieces, ensuring they are of uniform size for even cooking. If using frozen peas, ensure they are thawed and set aside.

Step 2: Heat the Oil

In a large pan or kadai, heat the oil over medium heat. Add the cumin seeds and let them splutter, releasing their aroma.

Step 3: Sauté Onions and Spices

Once the cumin seeds are sizzling, add the finely chopped onions and sauté until they turn golden brown. Next, stir in the ginger-garlic paste and slit green chilies. Cook this mixture for an additional minute until the raw smell disappears.

Step 4: Add Carrots and Peas

Add the chopped carrots to the pan, followed by the turmeric powder, coriander powder, and salt. Mix well to ensure the carrots are coated with the spices. Sauté for about 5 minutes before adding the green peas.

Step 5: Cook Until Tender

Cover the pan with a lid and cook on low heat for 10-12 minutes, stirring occasionally. This allows the vegetables to steam and become tender. If needed, add a splash of water to prevent sticking.

Step 6: Finish with Garam Masala

Once the sabzi reaches the desired tenderness, sprinkle garam masala over the top and mix gently. Cook for an additional 2-3 minutes to allow the flavors to meld together.
