How to Make Indian Soup with Fresh Fenugreek

  • 2 green chilies, chopped (adjust to taste)
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 4 cups vegetable or chicken broth
  • Salt to taste
  • 2 tablespoons oil or ghee
  • Fresh coriander leaves for garnish

Instructions

Step 1: Heat the oil or ghee in a large pot over medium heat. Add the cumin seeds and sauté for a minute until they start to sizzle.

Step 2: Add the chopped onions and cook until they become translucent. Stir in the minced garlic, grated ginger, and green chilies. Sauté for another 2-3 minutes until fragrant.

Step 3: Next, add the pureed tomatoes, turmeric powder, and salt. Cook this mixture until the oil starts to separate from the tomatoes, about 5-7 minutes.

Step 4: Add the chopped fresh fenugreek leaves to the pot and cook for an additional 2-3 minutes, allowing the leaves to wilt.

Step 5: Pour in the vegetable or chicken broth and bring to a boil. Once boiled, reduce the heat and let it simmer for 10-15 minutes to allow the flavors to meld.

Step 6: Finally, stir in the garam masala and adjust the seasoning if necessary. Cook for another 2 minutes.

Step 7: Serve hot, garnished with fresh coriander leaves. This soup can be enjoyed on its own or paired with a slice of crusty bread or naan.
