Seafood pilaf is a delectable dish that brings together the rich flavors of seafood and the aromatic spices of Indian cuisine. This recipe offers a fragrant and tasty experience, perfect for an impressive dinner or a comforting meal at home. Below, you'll find an easy-to-follow guide on how to make seafood pilaf with Indian spices.

Ingredients

  • 1 cup basmati rice
  • 500 grams mixed seafood (shrimp, mussels, and fish)
  • 2 tablespoons ghee or vegetable oil
  • 1 large onion, finely sliced
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 2 green chilies, slit (adjust based on spice preference)
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • ½ teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 2 cups water or seafood stock
  • Salt, to taste
  • Fresh cilantro leaves, for garnish
  • Lemon wedges, for serving

Instructions

1. Prepare the Rice

Start by rinsing the basmati rice under cold water to remove excess starch. Soak the rice in water for about 20-30 minutes and then drain it to ensure fluffy pilaf.

2. Sauté the Aromatics

In a large pot or deep pan, heat the ghee or vegetable oil over medium heat. Add the cumin seeds, allowing them to sputter for a few seconds before adding the sliced onion. Sauté the onion until it turns golden brown.

3. Add Garlic and Ginger

Once the onions are browned, add minced garlic, grated ginger, and slit green chilies. Sauté for another minute until fragrant.

4. Stir in the Spices

Next, add the coriander powder, turmeric powder, and salt. Stir to combine and cook for about 2 minutes, allowing the spices to release their flavors.

5. Incorporate the Seafood

Add the mixed seafood into the pot and gently fold it into the spice mixture. Cook for 3-4 minutes until just cooked through. Be careful not to overcook the seafood.

6. Add the Rice

Add the drained basmati rice to the pot and stir carefully to avoid breaking the grains. Cook for an additional 2 minutes, allowing the rice to absorb the flavors.

7. Cook the Pilaf

Pour in 2 cups of water or seafood stock, and sprinkle garam masala over the top. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for 15-20 minutes or until the rice is fully cooked and has absorbed the liquid.

8. Fluff and Garnish

Once cooked, turn off the heat and let the pilaf sit covered for 5 minutes. Fluff the rice with a fork, and garnish with fresh cilantro leaves.

9. Serve

Serve the seafood pilaf hot with lemon wedges on the side for a touch of acidity. Enjoy this delicious blend of spices and seafood as a complete meal or paired with a side of raita or salad.

This seafood pilaf with Indian spices is sure to impress your guests and satisfy your cravings for something exotic. Enjoy the rich flavors and the wonderful aroma that fills your kitchen as you prepare this delightful dish!
