Ingredients

To prepare delicious sambar, you’ll need the following ingredients:

  • 2 tomatoes, chopped

Instructions

Step 1: Cook the Toor Dal

Start by rinsing the toor dal under running water until the water runs clear. In a pressure cooker or pot, add the dal with 3 cups of water and cook until soft. If using a pressure cooker, it usually takes about 3-4 whistles. Once cooked, mash the dal gently and set it aside.

Step 2: Prepare the Vegetables

In a separate pot, add the mixed vegetables along with chopped onions, tomatoes, and green chilies. Pour in enough water to cover the vegetables and add salt. Cook the mixture until the vegetables are tender, about 10-15 minutes.

Step 3: Combine Sambar

Once the vegetables are cooked, stir in the mashed toor dal. Add the sambar powder and tamarind paste, mixing well to combine. Adjust the thickness by adding more water if necessary. Let it simmer for another 5-10 minutes, allowing the flavors to meld together.

Step 4: Temper the Sambar

In a small pan, heat the oil over medium heat. Add mustard seeds and let them splutter. Turn off the heat and pour the tempering over the simmering sambar. This step adds an aromatic finish to the dish.

Step 5: Garnish and Serve

Garnish your sambar with freshly chopped coriander leaves. Serve hot with steamed rice, dosa, or idli for a filling meal.

Tips for Perfect Sambar

  • Customize the vegetables based on your preferences or seasonal availability.
  • Ensure that the lentils are cooked well; they should be soft and easy to mash.
  • Adjust the tanginess by varying the amount of tamarind used.
  • For a richer flavor, add a pinch of asafoetida (hing) while tempering.
