Step-by-Step Instructions

1. Prepare the Spinach

Begin by washing the spinach leaves thoroughly to remove any dirt or grit. Bring a pot of water to a boil and add a pinch of salt. Blanch the spinach leaves for about 2-3 minutes, then transfer them to a bowl of ice water to retain their vibrant green color. After a few minutes, drain the spinach and finely chop it or blend it to a smooth puree using a blender.

2. Cook the Aromatics

In a pan, heat oil or ghee over medium heat. Add cumin seeds and let them splutter. Next, add the finely chopped onions and sauté until golden brown. Incorporate the ginger-garlic paste and green chilies, cooking for an additional minute until fragrant.

3. Combine Spinach and Paneer

Add the pureed spinach into the pan and mix well with the onion mixture. Season with salt and garam masala, stirring to combine all the flavors. Allow the spinach to cook for about 5-7 minutes, stirring occasionally. If you prefer a creamier texture, add cream at this stage.

4. Add the Paneer

Gently introduce the paneer cubes into the spinach mixture. Stir carefully to prevent breaking the paneer, and let it simmer for an additional 5 minutes. The paneer will soak up the flavors and become delectably soft.

5. Serve

Your Palak Paneer is now ready! Serve it hot with Indian bread like naan, chapati, or paratha, or alongside steamed rice. Garnish with a drizzle of cream or a sprinkle of garam masala for an extra touch.
