How to Make Indian Aloo Gobi (Potato and Cauliflower Curry)

Indian Aloo Gobi is a delicious and hearty curry made with potatoes (aloo) and cauliflower (gobi). Ingredients

  • 2 medium potatoes, peeled and cubed
  • 1 medium cauliflower, cut into florets
  • 1 large onion, finely chopped
  • 2 medium tomatoes, chopped
  • 2-3 tablespoons oil (vegetable or mustard oil)
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • 1-2 green chilies, slit (adjust to taste)

Instructions

Step 1: Prepare the Vegetables

Start by washing the potatoes and cauliflower thoroughly. Peel the potatoes and cut them into bite-sized cubes. Cut the cauliflower into florets, ensuring they are similar in size for even cooking.

Step 2: Heat the Oil

In a large pan or skillet, heat the oil over medium heat. Once the oil is hot, add the cumin seeds and let them sizzle for a few seconds until fragrant.

Step 3: Sauté the Onions

Add the finely chopped onions to the pan and sauté until they turn golden brown. This step adds a rich flavor base to your dish.

Step 4: Add Spices and Tomatoes

Stir in the green chilies, turmeric powder, and coriander powder. Mix well and sauté for a couple of minutes. Then, add the chopped tomatoes and cook until they soften and blend into the mixture, about 5-7 minutes.
