Khichdi, a traditional Indian dish, is a comforting and nutritious option that combines rice and lentils with an array of vegetables. Ingredients

  • 1 cup basmati rice
  • 1/2 cup moong dal (yellow split lentils)
  • 1 medium carrot, diced
  • 1 medium potato, diced
  • 1/2 cup green peas
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1-2 green chilies, slit (adjust to taste)
  • 1 tablespoon ghee or oil
  • Salt to taste
  • 4 cups water
  • Fresh coriander leaves for garnish

Instructions

Step 1: Prepare the Rice and Lentils

Start by washing the basmati rice and moong dal thoroughly under running water. Rinse them until the water runs clear.
Soak the rice and lentils together in water for about 30 minutes. This helps in cooking them evenly.

Step 2: Sauté the Spices

In a heavy-bottomed pot or pressure cooker, heat the ghee or oil over medium heat. Add cumin seeds and allow them to splutter.
Next, add slit green chilies and sauté them for a minute to release their flavor.

Step 3: Add Vegetables

Add the diced carrots, potatoes, and green peas to the pot. Sauté the vegetables for about 3-4 minutes until they are slightly tender. This step enhances the flavor and adds a lovely texture to your khichdi.

Step 4: Combine Rice, Dal, and Spices

Drain the soaked rice and moong dal, then add them to the pot. Sprinkle in the turmeric powder and salt to taste. Mix everything well, ensuring the rice and lentils are coated with the spices and oil.

Step 5: Add Water and Cook

Pour in the 4 cups of water and stir to combine all the ingredients. If you are using a pressure cooker, close the lid and cook for about 2-3 whistles. If cooking in a regular pot, cover it and let it simmer for about 20-25 minutes, or until the rice and lentils are soft and mushy.

Step 6: Serve and Garnish

Once cooked, fluff the khichdi with a fork. Garnish with freshly chopped coriander leaves for a splash of color and flavor.
Serve hot with a side of yogurt or pickles for a wholesome meal.
