Instructions

Step 1: Preparing the Chickpeas

If you're using dried chickpeas, soak them overnight in ample water. The next day, drain and rinse them, then cook in a pressure cooker with enough water until they’re soft (about 15-20 minutes). If using canned chickpeas, simply drain and rinse them, and set aside.

Step 2: Cooking the Base

In a pan, heat the olive oil or ghee over medium heat. Add cumin seeds and let them sputter. Then, add the chopped onions and sauté until they turn translucent.

Step 3: Aromatics and Spices

Add the minced garlic, grated ginger, and slit green chilies to the pan. Sauté for about 1-2 minutes until fragrant. Then, pour in the pureed tomatoes and cook until the mixture reduces and oil starts to separate from the masala.

Step 4: Adding Spices

Sprinkle in the coriander powder, cumin powder, and salt. Mix well and let the mixture simmer for another 5 minutes, allowing all flavors to meld together.

Step 5: Incorporating Spinach and Chickpeas

Add the chopped spinach to the pan and stir until it wilts. Then, add the cooked chickpeas and mix thoroughly with the masala. If the mixture is too thick, add a little water to reach your desired consistency.

Step 6: Finishing Touches

Sprinkle garam masala over the chickpea-spinach mixture and stir well. Let it cook for an additional 5 minutes, blending the spices into the dish. Taste and adjust the seasoning as needed.
