Instructions

Step 1: Sauté the Aromatics

In a large pan, heat the vegetable oil or ghee over medium heat. Add the cumin seeds and let them splutter. Then, add the chopped onions, minced garlic, ginger, and green chili. Sauté until the onions are golden brown, which should take about 5 minutes.

Step 2: Cook the Tomatoes

Add the chopped tomatoes to the pan. Stir in the turmeric powder, red chili powder, and salt. Cook the mixture until the tomatoes are soft and mushy, approximately 10-15 minutes. You can cover the pan to speed up the cooking process.

Step 3: Blend for Smoothness

Once the tomatoes are cooked down, remove the pan from heat. Allow the mixture to cool slightly, then transfer it to a blender. Blend until you achieve a smooth consistency. If you prefer a chunkier texture, you can blend it less or leave some chunks intact.

Step 4: Simmer the Soup

Return the blended mixture to the pan and add 4 cups of water or vegetable broth. Bring the soup to a gentle boil, then reduce the heat and let it simmer for 10-15 minutes. Stir occasionally to prevent sticking.

Step 5: Final Touches

Stir in the garam masala and adjust the seasoning with more salt if needed. If you like your soup tangy, you can add lemon juice at this stage. Add the chopped coriander leaves just before serving for a burst of freshness.
