  • 1 teaspoon cumin seeds

  • Fresh coriander (cilantro) leaves, chopped
  • Fresh mint leaves, chopped
  • 2 tablespoons cooking oil or ghee

Instructions:

Step 1: Prepare the Base

In a large pot, heat the cooking oil or ghee over medium heat. Add the cumin seeds and allow them to sizzle for a few seconds, releasing their aromatic essence. Then, add the finely chopped onion and sauté until it turns translucent.

Step 2: Add Aromatics

Once the onions are cooked, stir in the minced garlic and grated ginger. Cook for another minute, ensuring the garlic doesn’t burn. Add the turmeric powder and mix thoroughly.

Step 3: Incorporate Tomatoes

Add the chopped tomatoes and slit green chilies to the pot. Cook this mixture until the tomatoes break down and become saucy, about 5-7 minutes. Stir occasionally to prevent sticking.

Step 4: Simmer the Soup

Once the tomatoes are well cooked, pour in the vegetable broth or water. Stir everything together, then bring the mixture to a gentle boil. Reduce the heat and let it simmer for 10-15 minutes to allow the flavors to meld. Season with salt and add the garam masala towards the end of cooking.

Step 5: Blend and Strain (Optional)

If you prefer a smooth soup, use an immersion blender to puree the soup until smooth. Alternatively, you can let it cool slightly and blend it in batches using a regular blender. If you desire a thinner soup, strain it through a fine sieve.

Step 6: Add Fresh Herbs

Once blended, return the soup to the pot and stir in the chopped fresh coriander and mint leaves. Allow it to cook for an additional 1-2 minutes to enhance the herbal flavors.
