Instructions

Step 1: Prepare the Tamarind

Start by soaking the fresh tamarind in warm water for about 30 minutes. Once softened, mash it with your hands to extract the pulp. Strain through a sieve to remove the fibers and seeds, collecting the tamarind water in a bowl. Set aside.

Step 2: Sauté the Aromatics

In a heavy-bottomed pot, heat the oil or ghee over medium heat. Add the cumin seeds and allow them to splutter. Then, add the finely chopped onions and sauté until they become translucent.

Step 3: Add the Spices

Add the ginger-garlic paste and green chilies to the onions, sautéing for an additional 2 minutes to release the flavors. Next, stir in the chopped tomatoes, turmeric powder, and coriander powder. Cook until the tomatoes soften and the oil begins to separate from the mixture.

Once your spice mixture is ready, pour in the prepared tamarind water and add the remaining water. Stir well and bring the mixture to a boil. Reduce the heat and let it simmer for about 10-15 minutes. This allows the flavors to meld together beautifully.

After simmering, taste the soup and adjust the salt as needed. If you prefer a spicier soup, you can add a pinch of red chili powder at this stage. For an extra layer of flavor, consider adding a tadka (tempering) of mustard seeds and dried red chilies in ghee, poured over the soup just before serving.
