Ingredients

  • 500 grams of prawns, cleaned and deveined
  • 1 cup coconut milk
  • 2 tablespoons oil (coconut oil or vegetable oil)
  • 1 large onion, finely chopped
  • 2-3 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 2 green chilies, slit lengthwise
  • 1 teaspoon mustard seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

Step 1: Prepare the Spices

In a large pan, heat the oil over medium heat. Add the mustard seeds and let them splutter. Once they begin to pop, add the finely chopped onions. Sauté the onions until they turn golden brown.

Step 2: Sauté Aromatics

Add the minced garlic, grated ginger, and slit green chilies to the pan. Cook for another 2-3 minutes until fragrant.

Step 3: Add Spices

Stir in the turmeric powder, red chili powder, and salt. Mix well to coat the onions and release the flavors of the spices.

Step 4: Cook the Prawns

Add the cleaned prawns to the pan and sauté for about 3-4 minutes, or until they turn pink. Make sure not to overcook them, as they can become tough.

Step 5: Add Coconut Milk

Pour in the coconut milk and bring the mixture to a gentle simmer. Allow it to cook for an additional 5-7 minutes, stirring occasionally, until the prawns are fully cooked and the sauce has thickened slightly.

Step 6: Finish with Garam Masala

Once done, add the garam masala and adjust the seasoning if needed. Let it simmer for another minute to allow the flavors to meld.

Step 7: Garnish and Serve

Remove the pan from heat and garnish with fresh coriander leaves. Serve your Indian prawns with coconut milk hot, alongside steamed rice or warm naan.
