Poori with Sugar

Poori is a deep-fried, fluffy bread that can be enjoyed with sugar for a sweet twist.

Ingredients:

  • 2 cups whole wheat flour
  • 1 tablespoon semolina (rava)
  • Water (as needed)
  • Oil (for deep frying)
  • Sugar (to taste)

Instructions:

  1. Mix the whole wheat flour and semolina in a bowl.
  2. Gradually add water to knead into a smooth dough. Cover and let it rest for 20-30 minutes.
  3. Divide the dough into small balls and roll them out into circular shapes.
  4. Heat oil in a pan and deep-fry the rolled-out dough until they puff up and become golden brown.
  5. Remove and place on paper towels to drain excess oil. Serve hot with sugar sprinkled on top.

Sheera (Suji Halwa)

Sheera, also known as Suji Halwa, is a delightful semolina dessert commonly enjoyed at breakfast.

Ingredients:

  • 1 cup semolina (suji)
  • 1 cup sugar
  • 2 cups water
  • 2 tablespoons ghee (clarified butter)
  • 1/4 teaspoon cardamom powder
  • Chopped nuts (almonds, cashews, or pistachios)

Instructions:

  1. In a pan, heat ghee and roast the semolina on low heat until it turns light golden and aromatic.
  2. In another pot, bring water to a boil, and then slowly add the roasted semolina while stirring continuously to avoid lumps.
  3. Add sugar and continue to stir until it dissolves and the mixture thickens.
  4. Stir in the cardamom powder and chopped nuts. Cook for another minute, then remove from heat.
  5. Serve warm, garnished with more nuts if desired.

Chickpea Flour Pancakes (Besan Chilla with Jaggery)

Besan Chilla, traditionally a savory dish, can be modified to create a sweet version using jaggery.

Ingredients:

  • 1 cup chickpea flour (besan)
  • 1/4 cup jaggery (grated)
  • 1-2 green cardamom pods (powdered)
  • Water (as needed for batter)
  • Oil or ghee (for cooking)
  • Chopped nuts (optional)

Instructions:

  1. In a mixing bowl, combine chickpea flour, grated jaggery, and cardamom powder.
  2. Add water gradually to form a smooth batter. The consistency should be similar to pancake batter.
  3. Heat a non-stick pan and add oil or ghee.
  4. Pour a ladleful of batter onto the pan and spread it evenly. Cook until bubbles appear on the surface, then flip and cook the other side until golden brown.
  5. Repeat with the remaining batter. Serve warm, optionally garnished with chopped nuts.

Rice Flour Laddus

Rice flour laddus are a nutritious and sweet treat, perfect for breakfast or snacking.

Ingredients:

  • 2 cups rice flour
  • 1 cup grated coconut
  • 3/4 cup jaggery (grated)
  • 1/4 teaspoon cardamom powder
  • 1/4 cup ghee
  • Chopped nuts (optional)

Instructions:

  1. In a pan, dry roast the rice flour until lightly golden, then let it cool.
  2. In another pan, heat ghee and add grated coconut. Sauté for a few minutes until fragrant.
